Egyptian Kochari, this dish is made from a mixture or layers of rice, pasta, brown lentils and fried onions. It is garnished with tomato sauce and, depending on preference, red pepper sauce.

Kochari is a very complete family dish and perfect for vegetarians.

Kochari or koschari (كشرى, [ˈkoʃæɾi]) is an Egyptian culinary specialty.

 

 

 

Ingredients

 

- 250 g of macaroni

- 1 glass of rice

- 1 glass of beluga lentils

- 500 ml of tomato coulis

- 1 can of chickpeas

- 6 cloves of garlic

- 2 large onions

- 2 tablespoons of vinegar

- 1 ladle of olive oil

- 1 teaspoon of cumin coriander powder

- 1 teaspoon of ground coriander

- 1 tablespoon of chili

 

Preparation

 

In two saucepans, boil water and cook macaroni and rice. Refer to the cooking time indicated on your packages.

Cook your black lentils in three glasses of water.

Cook the chickpeas in another saucepan filled with boiling water, then drain and rinse them under running cold water.

Finely slice the onions, and brown them in oil.

Peel the garlic cloves and fold them before frying them in the same oil as the onions.

When the onions are well fried, add the tomato coulis.

Then add the spices: cumin, coriander and pepper.

Then add the vinegar and let reduce for 10 to 15 minutes, stirring occasionally.

In a high-sided pan, brown the chickpeas, lentils and rice over low heat.

In another pan, lightly toast the macaroni.

In a large dish, pour the rice, chickpea and lentil mixture. Add the macaroni on top.

Then pour the tomato sauce with the garlic.

Add the fried onions all over the dish.

This dish is to be eaten hot.
