Koshari is the Egyptian "sandwich", the junk food of this North African country. It can be tasted on every street corner in Cairo. But at the nutritional level it is much better than our preparations made from more or less adulterated meat. You come in and no one asks you "salad, tomato, onion?" you are asked "small, medium or large?". It is a dish that sticks to the body without meat. Only seeds, grains, tomatoes and spices.

 

Origin of the recipe

 

 

EGYPT

 

 

Ingredients for 8 pers.

 

 250 g of short macaroni

 1 glass of lentils (black = preferably beluga)

 1 large can of chickpeas

 2 large onions

 1 ladle of olive oil

 500 ml of tomato coulis

 1 tablespoon chopped dry chilli (mild)

 1 teaspoon of cumin

 1 teaspoon ground coriander

 6 cloves of garlic

 2 tablespoons of vinegar

 

 

 

Steps

 

Step 1

Cook the rice in two glasses of water (me in the microwave for 14 minutes).

2nd step

- Cook the macaroni in the usual way in a large volume of salted water as indicated on the package.

Step 3

- Cook the lentils (ideally the black "beluga" lentils but I did not find any) in three glasses of water and without salt, start cold, until all the liquid has been absorbed .

Step 4

Finely mince the onions.

 

Step 5

Brown them in a sauté pan in a ladle of olive oil.

--Stir constantly until they are completely caramelized.

Step 7

Remove the onions from the pan and keep the oil in to fry the chopped garlic.

Step 8

When the garlic is golden brown (but not black!) Add the tomato coulis.

Then the chopped dry pepper (be careful not to spice the pepper too much!).

- Then the cumin powder.

Then the coriander powder.

- Then the vinegar. Then let the coulis reduce to 2/3 over low heat for about 15 minutes, stirring often, then set aside.

Step 13

Drain the chickpeas and rinse them under running water.

Step 14

Combine the rice, lentils and chickpeas and heat gently.

Step 15

Grill the macaroni with a little oil so that they brown.

Pour the hot rice / lentils / chickpeas mixture into a dish.

--Top the slightly crispy macaroni.

Pour the warmed tomato and spice sauce on top.

Step 19

Finally, pour the fried onions and distribute them over the entire surface of the dish.
