KOCHARI, TRADITIONAL EGYPTIAN DISH (WITH STEPS)

 

 

I was immersed in an Arab-Berber culture, I became interested in West Indian culture for love and crossbreeding, I am madly in love with Indian culture ... three trends that make my daily life so rich and colorful! But I never told you about my fourth culture in which I was immersed as a child through a cathode-ray screen, and more exactly its cinema.

 

Egypt, at the crossroads of Africa, the Mediterranean and the Middle East, it has always exerted a great fascination on men, country of pyramids, one of the greatest civilizations in the world where the Nile caresses its most authentic villages, land where all religions coexist without hatred or contempt, a culture shared between its past and development… It is also the third largest producer of films after Bollywood and Hollywood.

The seventh art is not a recent contribution of decolonizations. In 1896 the cafes already had their animated projection, and in 1917 there were already 80 cinemas in Egypt, and in 1930 sound appeared and thus the first Egyptian talkie film. The films are of all kinds, from musical comedy with Muhammad Abd al-Wahhab, Oum Kalsoum, Farid El Atrache, Chadia, Abdelhalim Hafed, Layla Murad, Sabah ... to melodrama, from comic to romantic because love stories abound not !!

Then in the 1950s, we witnessed a more Republican cinema which reinforced the quality of Egyptian cinema. Literature remains a main source of inspiration, especially with the works of Naguib Mahfouz, those of Tawfiq al-Hakim or Taha Hussein. Little by little, the cinema develops with social, political and cultural stories marking the wave of change during the 1970s, with the death of President Nasser.

 

Never has such a cinema stayed the course despite competition, social and political facts. Thanks to him and to the song, the dialect of Cairo has become for the Arabic-speaking group a language understood by ALL. Egyptian culture has thus become the second culture adopted by all those who have bathed in its cinema.

 

It is the same with his theater where scenario, song and dance make a very beautiful marriage.

 

Here is a video of the famous belly dancer, Fifi Abdou who has kept the authentic style of this dance. Just dressed in a light "Jebala" that does not spoil her shape and her sensual sway!

 

 

 

 

 

Just as I love his cinema, I am fond of his cuisine combining Persian, African, Indian, Turkish, Lebanese styles ... You can taste fresh vegetables with each meal (cucumber, onion, tomatoes ...), vinegar (small cucumber, eggplant, olives ...), in sauce such as prawns and spinach, the famous Foul (beans), Falafel. Various stuffed, grilled, kebab, stewed meats with slow and gentle cooking or steaming. Fruits such as mango, tamarind, watermelon, melon ... an inexhaustible consumption of rice and bread almost at every meal, eggs, donuts ... coffee with spices, Turkish tea ... And to my great pleasure, an endless variety of the most surprising spices and herbs, did you know for example that Egypt has its own blend of curry?

It is also a street food with a wide variety of snacks or dishes to enjoy under the thumb like the famous Kochari, one of the really traditional dishes!

I took advantage of my sister's visit to make this family dish. She told me about this dish she tasted during her trip to Egypt last year, as well as other specialties well known to fans of Egyptian cinema.

I found the recipe on a superb travel site: Un monde autre. To achieve it, I followed the advice of my sister who found the result really authentic and good !!

 

For 4 to 6 people

 

2 glasses of rice

1 glass of spaghetti cut in 4

1 glass of angel hair

1 glass of minestronne pasta (if not shellfish)

1/2 glass of lentils (green or blond)

1/2 glass of chickpeas soaked the day before

Salt, ground pepper, ground cumin, paprika, ground pepper,

 

Garnish :

3 onions and a little flour

Oil bath

 

Sauce :

1 can of tomato coulis

3 cloves of garlic

1 C. vinegar

Salt, pepper, ground pepper
