Egyptian cuisine and culinary traditions

 

Egyptian cuisine is at the crossroads of different Mediterranean influences (Lebanese, Turkish, Greek and Syrian). The meal is very important for the Egyptians. It is a friendly and sharing moment. The drink is also a symbol of welcoming foreigners.

A trip to Egypt is also appreciated by discovering ancestral culinary traditions. A blend of spices and flavors that reflects the cultural diversity inherited from its history.

What do we find on Egyptian tables?

 

A little bit of everything !

 

First, baladi (aïch) bread goes well with any dish. It is a flat, round, hollow bread made with water, flour and yeast.

 

Mezze are very common in Egypt. These are assortments of small dishes with a thousand flavors where you can pick according to your tastes: hummus (chickpea puree with sesame), babaganoush (smoked eggplant puree with sesame) and tahina (sesame cream) .

 

The salads are very simple, with as ingredients: green salad, cucumbers, tomatoes and onions. You can also often find in restaurants the famous fattouche, a delicious Lebanese mixed salad with the particularity of combining mint, onions and toasted Lebanese bread. The Lebanese influence is also found in the tabbouleh made with parsley. Finally, salata zabadi (made with yogurt, garlic, mint and cucumbers) is very pleasant to enjoy on the banks of the Nile. Garlic products like toumeya, mashed garlic and fried eggplant are often found.

 

Egyptian Specialty

 

But the specialty that the Egyptians love is the foul which they taste at breakfast in the hollow of their baladi bread. They are found on every street corner. It's a pot of beans with lemon and cumin, not to mention the oil. Note that Egyptian lemons are particularly tasty with hints of ginger and musk. To taste absolutely!

 

The beans are also used to make fried foul croquettes called falafels. They are eaten in a sandwich of Egyptian bread.

 

Kochary is another popular dish from Egypt. This is an unlikely mixture of ingredients. You can find pasta (macaroni), rice, lentils, spaghetti, fried onions, tomato sauce, peppers and garlic of course!

 

Another culinary curiosity that you can meet in Egypt: the mouloukhia. It is a sticky soup made from the leaves of corete, a vegetable plant native to India. This soup most often accompanies a dish of chicken and rice.

 

The most common chorba is also red lentil soup, which is garnished with a drizzle of olive oil and lemon. A delight !

 

And the stuffed vine leaves that accompany the yoghurt salad!… They are delicious! Served hot or cold depending on the season, they are made with rice, herbs, spices and sometimes meat.

 

Meats served in Egypt

 

We will surely suggest you to taste kofta! A long skewer of minced mutton. Or shawarma: a mutton sandwich of Lebanese origin served in a round, hollow bun with salad and spices. The kebab is also present in Egypt but in the form of grilled lamb blocks.

 

Fish and seafood in Egypt

 

Samak is what the fish is called in Egyptian. Make sure that it is fresh of course and that it comes from the Red Sea or the Mediterranean Sea ... and especially not the Nile before tasting it! Well cooked, Egyptian fish is very good. The best is called 111: it is the royal bar. Large shrimp are also delicious. The most famous restaurant in Egypt for its fish is the Greek in Alexandria. But you will also find very good suppliers and fish restaurants in Cairo: the Fish Market or Golden Fish. In these restaurants, the waiters make them choose raw on ice before cooking them grilled or fried.

 

Egyptian desserts

 

If you like oriental pastries, you will be in for a treat! The Egyptians cook them mainly during the month of Ramadan but they are found all year round in pastries.

 

The best known are baklawa (puff pastry with honey and pistachios or almonds), konafa (vermicelli with honey, pistachios, hazelnuts or walnuts ...), basboussa (a kind of semolina), atayef (small sweet donuts filled with almonds or other dried fruits).

 

There are also other delicious desserts such as mehallabeyya (rose water cream, rice flour and pistachios), rice pudding flavored with different aromas, Oum Ali (sweet milk with coconut and pistachios sprinkled with baked pastry)

 

What to drink in Egypt?

 

Cold drinks:

 

Still water: Be careful, tap water is not drinkable!

 

Drink only mineral water! Nestlé, Dasani, Aqua Siwa ... you will find many brands of water bottles at very reasonable prices.
